This is a rare white from very old vines, which Zeno Zignoli does not intend to extirpate and replace with commercially more viable red grapes, consistent with his vision of agriculture and the world more in general.
As Zeno told us, he only knows one way to make wine, and that is red. The result is this “white made like a red”, with long maceration on the skins, aged for at least six months in terracotta amphorae. It is not properly “orange”, rather a light, luminous gold with green notes.
We find it very good and very unusual. To describe its scents and flavours, which are dominated by green apples we like to say that it reminds us most of quality Calvados, but without the alcohol content and solemnity that come with it.
It is best to drink on its own, with small snacks, as an unusual aperitif.
